  • Orthodox manufacture of black tea is a more traditional method of production that produces full-leaf and broken-leaf grades. With the exception of China and the Darjeeling area in India, only about 10% of the world's black tea manufacture remains Orthodox. This is due to the expense and time requirements of the process.
  • The alternative to orthodox manufacture is CTC (cut, tear, curl). This method is more mechanized, much less expensive once the machinery is acquired, and yields more cups to the pound. However, most of the teas produced in this way are inferior quality, most often suitable for tea bags. We offer one CTC tea, Organic Tanzania, which is excellent quality.
  • "Wiry" refers to Orthodox manufacture tea leaves that are well twisted and thin.

Drink up, be happy: A survey earlier this year in Finland found that tea drinkers are less likely to be depressed. Researchers collected survey data from 2011 people in the Finnish general population. They used to Beck Depression Inventory as part of the survey. Those who reported drinking tea daily had a lower score on the Beck Depression Inventory and a lower prevalence of depression. No one who reported drinking more than 5 cups of tea/day reported depression. The mechanisms at work here are unknown and warrant further investigation. Eur J Epidemiol, January 2005.
