- China is to tea what France is to wine. Traditional divisions list thousands of teas. Today this terminology has undergone considerable change. The four main varieties in China are black, green, oolong, and scented. Keemuns are even referred to as a Bordeaux with soft qualities of a Burgundy.
- Try this tasty recipe from Taiwan before winter leaves us! Chicken Noodle Oolong Soup:
- 1 cup chopped celery
- 1 cup chopped onion
- 1/4 cup butter
- 12 cups water
- 1 cup diced carrot
- 3 TBS chicken bouillon or stock base
- 4 TBS oolong tea leaves (suggest Champagne Formosa Oolong)
- 1/4 tsp each salt and pepper
- 6 oz. egg noodles
- 4 cups chicken, cooked and diced.
- In a large saucepan, cook celery and onion in butter until tender; add remaining ingredients except noodles and half the tea leaves. Bring to a boil, reduce heat and simmer, covered, for 30 minutes. Add noodles and cook 10 min. longer or until noodles are tender, stirring occasionally. One or two minutes before serving, sprinkle the remaining tea leaves on top of soup. Makes about 4 quarts.

Tea and Weight loss: January seems to bring out the dieter in a lot of us, so if that's you, don't forget to drink your tea! Green tea has been shown in clinical studies to increase the amount of calories burned by humans by increasing fat oxidation. This effect is independent of the amount of caffeine in the tea. In a recent study that examined the effects of exercise and green tea, mice fed a high-fat diet who were both exercised and given green tea extract burned significantly more fat than mice who were either exercised or given green tea extract (but not both). There's also good news for those who prefer black tea. Researchers have found that Keemun black tea helps to reduce food intake, body weight, and blood triglycerides in obese rats.
