Tea Recipe: Green Tea Cookies
  • 3/4 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 3/4 cups flour
  • 2 tablespoons ground green tea, such as Sencha
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • Pinch salt

Beat butter and sugar until creamy. Beat in eggs and vanilla. Gradually add blended flour, baking soda, baking powder, salt, and ground tea. Blend well to form a soft dough. Refrigerate for 1/2 hour then roll and cut with cookie cutter. Bake at 400 degrees for 8-10 minutes and cool.

  • Tea and iron: Tea is known to interfere with absorption of iron from non-meat sources. But new evidence suggests that no restriction is needed for people who are not at risk for iron deficiency, and those who are prone to iron deficiency can simply drink tea between meals and wait at least one hour after eating before drinking tea.   • Tea and yeast: Exposure of Candida albicans to both tea catechin and traditional drugs (antimycotics) allows the use of lower doses of antimycotics. It is hoped that this may help to avoid the side effects of antimycotics. J Antimicrob Chemother 19 Dec 2003.
  • Tea and colon cancer: A recent mouse study suggests that green tea may help to reduce the incidence of colon cancer found in populations with high fat diets. Nutr Cancer 1 Jan 2003 46(2): p. 172.
